Banana Nut Chocolate Chip Muffins [Fail-Proof]

These muffins are perfect for any-time-of-day snacking. They’re light, fluffy, moist and totally customizable, although these chocolate chip nut muffins are a staple in our house. 

In our house we’re big banana bread people, one day Chris (my boyfriend) was munching on one of these when he mentioned the reason why he loves these so much is how easy they are to pop in your mouth and go. Compared to grabbing a plate and slicing off a piece of bread. That’s when it clicked in my head I knew I had to add these babies to the blog – so busy mom’s and boyfriends who hate doing dishes this one is for you.

Here’s what you’ll need:

  • 2  mashed ripe bananas
  • 1 ½ teaspoons baking powder ¼ teaspoon salt
  • 1 ½ cups all purpose flour
  • ⅔ cup sugar
  • 1 large egg
  • ½ cup melted butter
  • ¼ cup milk
  • chocolate chip, dark or semi sweet toasted nuts, walnuts

Method:

  1. Preheat oven to 350°F. Line muffin cups with muffin liner, or lightly grease.
  2.  Mix dry ingredients: flour, sugar, cinnamon, baking powder and salt in large bowl. Then mix wet ingredients: mashed bananas, vanilla egg, melted butter and milk in another bowl.
  3. Add wet mixture into dry mixture just until blended, do not over mix, clumps of bananas are totally ok. Add in chocolate chips and nuts.
  4. Divide batter among prepared muffin cups, filling each about 3/4 full.

    Bake for 30-32 minutes, test doneness by inserting a toothpick into center, it should come out clean. Transfer muffins to rack, let cool.
