  • 3 medium sweet potatoes peeled
  • 1/2 can coconut milk (we like the Thai brand) use full-fat for creamier potatoes


  1. Peel the potatoes and cut into a uniform size (this helps them cook faster)

  2. Cook potatoes until fork-tender. Either by boiling in a large pot of water or using an instant-pot. Strain potatoes and return to pot (no heat).

  3. Add coconut milk, using a potato masher (or a fork) mash the potatoes. (still no heat)

  4. Salt and pepper to taste. Add butter for a more buttery flavor/ add more coconut milk for a creamier side dish.

  5. Serve warm & enjoy!
