Coconut Sweet Potato Mash
A harmony of flavors, with the perfect balance of sweet, savory and saltiness. A truly addictive side dish designed to compliment any meal pairing.
- 3 medium sweet potatoes peeled
- 1/2 can coconut milk (we like the Thai brand) use full-fat for creamier potatoes
Peel the potatoes and cut into a uniform size (this helps them cook faster)
Cook potatoes until fork-tender. Either by boiling in a large pot of water or using an instant-pot. Strain potatoes and return to pot (no heat).
Add coconut milk, using a potato masher (or a fork) mash the potatoes. (still no heat)
Salt and pepper to taste. Add butter for a more buttery flavor/ add more coconut milk for a creamier side dish.
Serve warm & enjoy!
