This pancake recipe can be made with what you have on hand, nothing extra or fancy. Simply flour, baking soda, salt, sugar, oil, eggs, milk and if you have vanilla extract and blueberries you're in even better shape.
These pancakes are THICK AF, the secret is in the batter. With this batter recipe you can make endless flavor combinations from banana, to lemon ricotta, chocolate chip, apple spiced to even pineapple upside down pancakes. Needless to say, you need this batter recipe.
The thickest and fluffiest pancake recipe.
- 1 1/2 cup all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 Tbsp sugar
- 2 eggs
- 3/4 c whole milk
- 1 1/2 tsp vanillas extract
Whisk all dry ingredients together, then whisk in eggs and milk. Let rest for 10 minutes, so the gluten strands can form.
Heat up a griddle or non stick pan, spray with canola oil. Using a ¼ cup measuring cup, scoop the batter into the pan. Add blueberries to the pancake about 15 seconds after adding to the pan. Flip when bubbles form in the batter (about 1 minute). Let the second side cook for another minute then remove from heat.
