  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 2 eggs
  • 3/4 c whole milk
  • 1 1/2 tsp vanillas extract
  • oil
  • blueberries

  1. Whisk all dry ingredients together, then whisk in eggs and milk. Let rest for 10 minutes, so the gluten strands can form.

  2. Heat up a griddle or non stick pan, spray with canola oil. Using a ¼ cup measuring cup, scoop the batter into the pan. Add blueberries to the pancake about 15 seconds after adding to the pan. Flip when bubbles form in the batter (about 1 minute). Let the second side cook for another minute then remove from heat.
