Especially when tossed in garlic and parmesan cheese, you won't even notice you're munching a vegetable.
You may have tried sweet potato fries in the past but let's talk about these CARROT fries, these guys are packed with fiber and potassium.

Garlic Parmesan CARROT FRIES
Tasty, quick and nutritious perfect for snacking.
- 5 carrots cut into sticks
- 1 Tbsp evoo
- ¼ cup parmesan cheese
- 1 Tbsp garlic powder
- 1/2 Tbsp freshly ground black pepper
- ¼ cup fresh parsley chopped
- 1 Tbsp sea salt
Preheat oven to 400°F
Cut carrots into sticks: first cut to top and bottom off, then slice them in half, then slice those halves into half again lengthwise.
In a large bowl mix oil, salt, pepper, garlic, parsley and parm with carrot sticks.
Spread on a baking sheet.
Bake for 15-20 minutes
